Our Favorite Mexican Restaurants
Our favorite restaurants are first and foremost those of Mexican cuisine. We don't claim to be experts on what others like in Mexican food, but we know what we like. Some of our favorite items are:
1) Chili Rellenos - Lightly battered, tender Poblano chili oozing with cheese.
2) Pork Tacos - Spicy shredded marinated pork with onions and cilantro.
3) Chips - Thin and fresh, with interesting spicy salsas.
4) Chili Verde - Shredded pork with generous portions of green sauce.
5) Quesadillas - With the tortillas grilled.

Eloy's

Absolutely loved Eloy's sour cream enchiladas when they were on Eubank Blvd in the 1980s. After a couple moves, they are now serving those same great enchiladas at their Wyoming location. And of course being in New Mexico, they have REAL puffy sopapillas and honey.
La Mexicana

Fabulous chili rellenos. No breading and always very tender and spicy. Good quesadillas and taquitos, too.
Rubios
Various locations
California, Arizona

At Rubios we first discovered pork carnitas tacos in what they call Street Tacos. Tasty shredded pork along with guacamole, onions, and cilantro in a soft tortilla. And great Churros!
Los Caporales
122 N Bluff Rd.
Collinsville, IL - map
Very authentically ethnic. May be too authentic for some people's taste. Great pork tacos al pastor. Guacamole is very fresh. They have expanded their menu recently with many good items.
